On this occasion, the woman who was being served the dessert received third-degree burns as a result of the fire. Random occurrences like this are exactly why it’s essential to get creative with your restaurant insurance policy.

Flaming Banana Fosters are a favourite for customers because of the spectacle they cause. But this time the customer got a little more than she was asking.

This dessert is made by first sautéing bananas in butter and then pouring 151 proof rum over the bananas and setting them on fire. However, this night, some of the rum landed on the guest’s dress, which also caught fire.

A chef who works at the restaurant said the fire was a freak occurrence. Somehow, when the waiter was pouring the rum into a skillet, it overflowed which surprised the waiter and causing him to spray it over customers. According to the chef, this caused ‘an explosion of fire.’

The woman, named Katie Hudgins, was sitting closest to the waiter at the time and as a result, she caught the worst of the fire.

She is now suing the restaurant but the insurance company has spotted a loophole in the restaurant’s insurance policy and claims the restaurant wasn’t insured during the time when the accident occurred.

When questioned about it, the insurance company claimed that Ozona Blue’s restaurant insurance policy clearly ends one day before the accident and begins again the day after it.
